Great success at Tucker's Goat Farm today. In between instruction and jokes with Mr. Tucker, we were able to press 4 Tom molds from 12 gallons of milk. Two were rubbed with salt while the other half are set to soak in brine for 3 hrs.
The raw milk will be ready to sample in about three months time.
Comparisons will be made on:
salt rubbed vs brine
dried aromatic leaves & pine aged vs pine aged
